Strawberry Cheesecake

Prep time: 20 minutes plus 4 hours setting time, or overnight

Serves: 8-10


  • 150g McVitie’s original digestive biscuits
  • 80g Beautifully Butterfully butter, melted
  • 500g Manhattan cream cheese, softened
  • ½ cup Merryfield caster sugar
  • Zest of ½ lemon
  • 1 tsp White Mill vanilla extract
  • Fresh strawberries, for topping


  1. Grease base and sides of 22cm springform pan and line the base with baking paper.  
  2. Place biscuits in a plastic bag, seal and gently crush with a rolling pin until finely crumbled. Add melted butter, mixing together until well combined. Press the biscuit mixture evenly and firmly over base of the pan, then refrigerate. Prepare the filling while the base sets in the fridge.
  3. Beat softened cream cheese, sugar, lemon zest and vanilla in a medium bowl, with an electric mixer until smooth.
  4. Pour into pan over crumb base. Refrigerate for 4 hours or overnight until set.
  5. Just before you are ready to serve, slice the strawberries and arrange them in a circlular fan over the top of the cheesecake.

Optional: Dust with sifted icing sugar before serving.

Tip: If you don’t have strawberries, you can substitute with blueberries, raspberries, mango or sliced banana.
