Feta and Brown Rice Patties

Method:

  1. Combine rice, feta, cottage cheese, pumpkin, garlic, egg, flour and parsley in a bowl. Season. Using damp hands, shape ¼-cup measures of mixture into 16 patties.
  2. Heat reserved oil in a large frying pan over moderately low heat. Cook patties, in 2 batches, for 2 minutes each side or until golden. Serve with chutney and rocket.

Tip 1: Make patties up to 2 days ahead. Cover and refrigerate.

Tip 2: Use orange sweet potato instead of pumpkin.
