Fruit Mince Pie Tiramisu

Method

  1. Combine berries and 1 tbsp icing mixture in a bowl.
  2. Set aside for 5 mins, or until icing mixture dissolves.
  3. Dissolve coffee in 2 tsp boiling water. Then cool.
  4. Whip cream and remaining icing mixture until soft peaks form.
  5. Add cooled coffee and mix to combine.
  6. Break or chop mince pies into pieces.
  7. Divide half between serving glasses.
  8. Pipe or spoon half the coffee cream over mince pies.
  9. Top with berries, remaining coffee cream and mince pies.
  10. Top with shaved chocolate.
