Prawn and Mango Salad
- Peel and devein the prawns, leaving tails intact. Cut the white part of the onions into long, thin strips. Slice the green parts thinly diagonally. Place in a bowl of ice-cold water.
- Combine the mayonnaise and sweet chilli sauce in a small bowl.
- Arrange salad leaves, mango and prawns on a serving platter. Drizzle with the sweet chilli mayonnaise, mainly on the prawns, then top with the drained onion and coriander leaves.
