Strawberry Rocky Road

Method 

  1. Line a lamington tin (or 20cm baking tray) with baking paper. Melt chocolate in microwave, stirring every 30 seconds. Remove once melted.
  2. Chop cloud biscuits into quarters and cut marshmallows in half. Set aside some of the strawberry eggs and then combine all ingredients together in a bowl and place into tin, spreading mixture into all corners.  
  3. Place the strawberry egg pieces over the top, and push in slightly so they set in the chocolate.
  4. Refrigerate for several hours before cutting into pieces.

Note: this can be stored in an airtight container in the fridge for several days.
