Seared Scallops in Raspberry & Prosecco Vinaigrette

Method

  1. Cook scallops as per instructions on packaging.
  2. Mash raspberries in a bowl with fork. Add mustard, sugar, olive oil and mix.
  3. Add prosecco, salt, pepper and mix.
  4. Drizzle over cooked, seared scallops and garnish with chives.
  5. Serve immediately.
