How to make Sesame Prawn Toast Garlic Bread

Ingredients
- 6 slices World Kitchen garlic bread
- 280g The Fishmonger garlic prawns, drained
- 1 Lodge Farms free range egg white
- 1 tsp finely grated ginger
- 1 spring onion, finely sliced, plus extra to serve
- 1 tsp White Mill cornflour
- Large pinch White Mill caster sugar
- ¼ tsp Stonemill ground white pepper
- 1 tbsp Stonemill sesame seeds
- Pure Vita canola oil cooking spray
- Asia Green Garden sriracha mayonnaise, to serve
Method
- Using a butter or palette knife, scrape the butter off the garlic bread slices and set it aside.
- Preheat oven to 180°C. Make the prawn paste by blitzing the prawns, egg white, ginger, spring onion, cornflour, sugar and pepper in a small food processor until combined. Add the reserved garlic butter and whizz into a smooth paste.
- Lay garlic bread slices flat on a baking sheet. Spread prawn paste evenly over the bread, pressing it down to keep it nice and firm.
- Sprinkle well with sesame seeds. Spray with oil and bake for 15 minutes or until crispy and browned.
- Cut each piece into 4 and place onto a platter. Drizzle with sriracha mayo and sprinkle with sliced spring onions.
Option: For a coarser prawn paste, you can chop the prawns by hand and mix with the other ingredients.
