Basque Chocolate Cheesecake
How to make Basque Chocolate Cheesecake
Prep Time: 10 minutes | Cook Time: 60 minutes | Serves: 12
Ingredients
- 3 Westacre Cream Cheese Blocks
- 1 cup White Mill Caster Sugar
- 300ml Farmdale Thickened Cream
- 1/4 cup White Mill Plain Flour
- 1/4 cup Cacao or Cocoa Powder
- 1 tsp Alcafe Gold Classic Instant Coffee
- 5 Lodge Farm Eggs
- 200g Choceur Dark Chocolate Block
Method
- Preheat oven to 200°C.
- Place a microwave safe container filled with chocolate in the microwave for a minute until melted.
- Place cream cheese and 5 eggs into the food processor and whizz until smooth.
- Add coffee, sugar, cacao powder and plain flour and whizz again until smooth.
- Mix together with a spoon before adding the melted chocolate in and stir.
- Line a springform pan with baking paper, pouring into the tin.
- Place on middle shelf of oven and bake for 45-60 minutes.
- Turn the oven off and let the cheesecake cool inside for 15 minutes, then move it to your bench to cool for an hour.
- Pop it in the fridge overnight to set.
- When you’re ready to serve, unspring the pan and slice the cake.
- Serve with fresh fruit.
