Basque Chocolate Cheesecake

How to make Basque Chocolate Cheesecake

Prep Time:  10 minutes        |        Cook Time:  60 minutes     |        Serves:  12

Ingredients

Method

  1. Preheat oven to 200°C.
  2. Place a microwave safe container filled with chocolate in the microwave for a minute until melted.
  3. Place cream cheese and 5 eggs into the food processor and whizz until smooth.
  4. Add coffee, sugar, cacao powder and plain flour and whizz again until smooth.
  5. Mix together with a spoon before adding the melted chocolate in and stir.
  6. Line a springform pan with baking paper, pouring into the tin.
  7. Place on middle shelf of oven and bake for 45-60 minutes.
  8. Turn the oven off and let the cheesecake cool inside for 15 minutes, then move it to your bench to cool for an hour.
  9. Pop it in the fridge overnight to set.
  10. When you’re ready to serve, unspring the pan and slice the cake.
  11. Serve with fresh fruit.
