How to make  Raid the Pantry Loaf

Prep Time:  10 minutes        |        Cook Time:  60 minutes   |        Serves:  12

Ingredients

Method

  1. Preheat oven to 180°C.
  2. Grate the fruit and vegetables.
  3. In a bowl, whisk together the eggs, oil and sugar.
  4. Add the flour, cinnamon and bi-carb soda and mix to combine.
  5. Stir through the grated fruit and vegetables and your choice of nuts, seeds or chocolate chips.
  6. Pour into a lined loaf tin and bake for 50–60 minutes, or until a skewer inserted in the centre comes out clean.
