Green Salad

Method

  1. Cook the green beans in a large pot of boiling salted water for about 2 minutes, just until they are tender/crisp and bright green. Using a slotted spoon, transfer the green beans to a large bowl of ice water and let cool completely. Drain well and transfer the green beans to a paper towel-lined baking tray and pat dry to remove any excess moisture.
  2. In a large bowl, toss the leaves, green beans and season with olive oil, lemon juice and salt.
