Raspberry, Strawberry and Mandarin Delight
- In a food processor, puree strawberries and raspberries with the sugar.
- Remove the zest from 1 mandarin and put it in a container.
- Squeeze the juice from both mandarins and add to the berries puree. Add 1 tablespoon of mint leaves (chopped) and process for 1 minute. Transfer to jars, in equal portions, and refrigerate for 1 hour.
- In a bowl, mix 1 tablespoon of mint leaves (finely chopped), mandarin zest, honey and almonds (chopped). Add in the Greek yogurt and mix well. Top each jar with a teaspoon of the yogurt mixture, garnish with a mint leaf and serve immediately.
