Apple Fillo Tarts

Method: 

  1. Preheat oven to 220ºC. Lay one pastry sheet on a flat work surface, covering the remaining sheets with a dry tea towel. Give the pastry sheet a light spray with oil. Place another sheet over the top and spray with the oil.
  2. Fold pastry in half crossways. Working quickly, tuck the corners underneath and carefully scrunch pastry edges to make a wrinkled round. Slide onto a large baking tray. Repeat with remaining pastry to create 3 more fillo rounds.
  3. Add sliced apples into the pastry rounds. Mix together sugar and cardamom in a bowl, then sprinkle over the tarts. Spray everything lightly with oil and top with almonds.
  4. Bake tarts for 8 minutes or until pastry is crisp and golden. Drizzle with honey and serve with yogurt.
