Baked Peaches

Method

  1. Pre-heat oven to 190°C  (170°C for fan-forced own)
  2. In a bowl, mix together the mascarpone cheese, ground almonds and sugar
  3. Cut the peaches in half and remove the stones with a teaspoon
  4. Divide the mixture between 8 halves, making a dome on top with the mixture
  5. Put the peaches on a baking tray, bake for 20 mins, until the peaches are tender and the topping browned
  6. Serve with a drizzle of honey. Optional - add a dollop of crème fraiche
