Bacon & Artichoke Frittata
- Preheat oven-grill to moderately high. Whisk eggs, cream and cheese. Season.
- Heat oil in a 22cm (top measurement) ovenproof frying pan over moderately high heat. Add bacon; cook and stir for 3 minutes. Add egg mixture. Sprinkle with artichokes and tomato. Reduce heat to moderately low; cook for 8 minutes or until set underneath.
- Grill for 3 minutes or until just set at centre. Stand in pan for 5 minutes. Serve with lettuce.
