Green Fish Curry

Method:

  1. Heat a wok or large non-stick frying pan over medium-high heat. Add the oil and heat until smoking. Add the curry paste and fry off for 1 minute or until aromatic. Add the coconut milk and simmer for 2-3 minutes at a reduced medium heat, or until the mixture thickens a little.
  2. Add stock, lime juice, sugar and fish sauce. Increase heat to high and bring to the boil, then reduce heat to medium again. Add the fish, beans, chilli and half the basil. Cook for 5 minutes or until the fish is cooked through.
  3. Garnish with the remaining basil and serve over rice.
