Grilled Beef with Rosemary Butter
Place vegetables in a microwave-safe bowl. Cover with plastic wrap; microwave on High (100%) for 6 minutes or until tender. Stand for 1 minute.
Meanwhile, combine butter, garlic and rosemary in a small bowl.
Heat a char-grill pan over moderately high heat. Spray beef and tomato with oil. Cook beef for 3 minutes each side for medium or until cooked to your liking. Remove from pan. Cover; rest for 5 minutes. Add tomato to pan; cook for 2 minutes or until starts to brown. Serve beef with tomato, rosemary butter and vegetables, sprinkled with oregano.
