Grilled Rosemary-Salmon Skewers

Method

  1. Preheat grill to medium-high.
  2. Combine rosemary, oil, garlic, lemon zest, lemon juice, salt and pepper in a medium bowl.
  3. Add salmon and toss through mixture until coated. Place salmon on 8 x 30cm skewers, alternating with the cherry tomatoes.
  4. Oil the grill rack. Grill the skewers, carefully turning once, until the salmon is cooked through (4 to 6 minutes). Serve immediately.
