Sweet & Spicy Chicken Drumsticks with Mediterranean Couscous

Method

Whisk all marinade ingredients together in a medium sized bowl.

Coat drumsticks and lay out on a baking tray lined with grease proof paper.

Coat pumpkin in 2 Tbsp. oil and cumin and place on a separate lined baking tray. Put both trays in a preheated 180°C (fan forced) oven. Remove pumpkin after 20 minutes or when it is soft. Leave Chicken in for another 15-18 minutes.

While chicken and pumpkin are cooking, make up the packet of couscous as per the packet instructions and set aside to cool slightly. In a large bowl combine couscous, pumpkin, pine nuts, feta and oil, spinach and onion.

Stir lime juice through couscous and season with salt and pepper before serving, topped with the warm chicken legs and a garnish of lime wedges.
