Tuna & Red Curry Fried Rice

Method

  1. Heat oil in a medium saucepan over high heat. Add paste; cook for 30 seconds or until fragrant. Add rice; cook and stir for 1 minute or until combined. Add coconut cream; cook and stir for 2 minutes or until liquid is absorbed.
  2. Stir in vegetables. Reduce heat to moderate; cook, covered, for 5 minutes or until tender. Stir in tuna. Top with onion and coriander. Serve with lime wedges.
