Veal Tortellini Hotpot

Method

  1. Heat oil in a large saucepan over moderately high heat. Add onion, capsicum, carrot, squash and rosemary; cook and stir for 3 minutes or just starting to colour. Add stock, diced tomato, tomato paste and 1 cup water; bring to the boil.
  2. Add tortellini; cook for 5 minutes or until pasta is tender. Stand for 5 minutes. Serve sprinkled with parsley.
