White Bean Cous Cous Salad
- Cook tomato and garlic cous cous as per packet cooking instructions, Set aside
- Rinse and drain cannellini beans and wash all vegetables
- Dice the cucumber, tomato and capsicum
- Chop mint and shallot
- Mix all together, salt and pepper to taste
- Drizzle with olive oil
Pan-fry lamb chops to desired taste and serve with White Bean Cous Cous Salad.
