White Bean Cous Cous Salad

Method

  1. Cook tomato and garlic cous cous as per packet cooking instructions, Set aside
  2. Rinse and drain cannellini beans and wash all vegetables
  3. Dice the cucumber, tomato and capsicum
  4. Chop mint and shallot
  5. Mix all together, salt and pepper to taste
  6. Drizzle with olive oil

To Serve:                                                                    
Pan-fry lamb chops to desired taste and serve with White Bean Cous Cous Salad.
