How to Make Basil Sorbet
- In a saucepan add the sugar and water and bring to the boil, stirring to dissolve the sugar. This becomes your sugar syrup. Remove from heat and let cool completely.
- In a blender combine the sugar syrup, lime zest, lime juice, basil leaves and blitz until smooth.
- Put in a container and place in the freezer to set – around 3 hours.
- Stir every 30 minutes for 2 hours and then leave in freezer for a further 1 hour to set completely.
Note: Basil Sorbet can be served on its own or as an accompaniment to sweet or savoury meals. It also makes a refreshing cleanser, between courses.
