How to Make Shiraz Poached Pears with Chocolate Fudge Sauce

Method

  1. Place the wine, water, orange rind, orange juice and brown sugar in a medium saucepan and stir over medium heat for 5 minutes or until sugar dissolves. Increase heat to high and bring to the boil. Add pears and reduce heat to medium-low. Simmer pears for 45 minutes or until tender. Cool completely in poaching syrup.
  2. Meanwhile, to make the spiced chodolate fudge sauce: place the cream and cinnamon in a small saucepan and bring to the boil over high heat. Reduce heat and add the extra brown sugar and chocolate. Cook, stirring, for 5 minutes or until chocolate is melted and mixture is smooth. Remove from heat.
  3. Place pears in shallow serving bowls. Serve drizzled with chocolate fudge sauce and extra cream.

Note: Pears are a great all-rounder for both sweet and savoury dishes. Simply peel, core and slice pears to use in muffins and cakes. For something a little fancy, try poaching them like we have here.
