How to Make Prawn Cutlet Tacos
- Remove tails from prawns and place prawns in a bowl. Add lime juice and zest, lemon zest and 1 teaspoon salt. Set aside.
- Place shredded cabbage, chopped coriander and 1 tablespoon olive oil in a bowl and toss to combine. Set aside.
- Heat grill pan until smoking and add a splash of olive oil. Grill soft shell tacos for 30 seconds either side.
- To assemble tacos, place cabbage, a few slices of cucumber and chilli on each, then top with prawns and garnish with extra coriander.
