How to Make Pumpkin, Cauliflower and Spinach Salad Method Preheat oven to 180ºC (or 160ºC for fan forced oven). Toss pumpkin, cauliflower in cumin and oil and place in a roasting pan. Roast for approximately 40 minutes, turning occasionally or until vegetables are tender. Remove from oven. Cool. Transfer to a large bowl. Reserve pan juices. Add olives, spinach, onion and parsley to bowl. Drizzle with reserved pan juices. Season to serve.
