Lemon Cheesecake Overnight Oats
How to make Lemon Cheesecake Overnight Oats

Prep Time:  10 minutes plus chill overnight          |        Serves:  1

Ingredients

  • 1 cup Oh So Natural organic oats  
  • 2 tbsp vanilla protein powder 
  • 2 tbsp Westacre cream cheese  
  • 1 tbsp Bramwells honey  
  • ½ cup Brooklea vanilla yogurt
  • 1 cup milk 
  • 6 fresh raspberries  
  • 2 Belmont Biscuit Co. digestive biscuits, crushed (reserve some for topping)    
  • 1 tbsp lemon juice  
  • ½ tbsp lemon zest (reserve some for topping)    
  • Brooklea vanilla yogurt, to serve   

Method

  1. Place oats in a mason jar, add protein powder and lemon juice. Layer with cream cheese. Sprinkle on crushed biscuits, honey and fresh raspberries, then top with yogurt and milk. Add lemon zest and stir to combine.  
  2. Place a lid on the jar and refrigerate overnight. In the morning, top with additional vanilla yogurt, crushed digestive crumbs and lemon zest, if desired.

Optional: Try layering top to bottom: lemon zest, milk, yogurt, raspberries, honey, digestive biscuits, cream cheese, lemon juice, protein powder and oats.
