Porridge Superfood Breakfast
How to make a Porridge Superfood Breakfast

Prep Time:  15 minutes, plus overnight soaking        |        Cook Time:  4 minutes        |        Serves: 1

Ingredients

  • 50g Goldenvale porridge oats
  • ½ cup (50g) of mixed berries (blueberries, raspberries, blueberries and strawberries) *
  • 1 tbsp (10g)   Oh So Natural chia seeds
  • 1 tbsp (10g) Oh So Natural quinoa
  • 1 tbsp   (10g) Just Organic coconut oil 10g
  • 75ml water
  • 75ml Inner Goodness soy milk (or semi skimmed milk of your choice)

Method

  1. Soak the quinoa and chia seeds over night with the oats and water and milk.
  2. Into a microwave safe container, add in the chia seed mix, berries, coconut oil, and oats. stir and cook in the microwave for two minutes.
  3. Stir again and cook for a further one to two minutes.
  4. Leave it to stand for a minute and then give it a final stir. Add more water if you like it runny.
  5. Top with berries.

Tip: You can also substitute fresh berries with Orchard & Vine frozen mixed berries.

Note: If you don’t have a microwave, cook in a heavy bottom pan. Warm the water, gradually add the oats whilst stirring, and add the rest of the ingredients. Leave on a low heat for 3-4 minutes and add more water if required.
