Whipped Coffee Overnight Oats

Creamy yogurt, sticky dates, and tart blueberries mixed through a chia and oat porridge makes a for a filling a moreish morning meal. How to make Whipped Coffee Overnight Oats

Prep Time:  10 minutes plus overnight to chill      |        Serves: 1

Ingredients

Overnight Oats

  • 1 cup Oh So Natural organic oats  
  • ½ cup Lyttos Greek style yogurt  
  • 2 dates, deseeded and chopped
  • 1 tbsp Oh So Natural chia seeds
  • 2 tbsp Brookdale maple syrup  
  • 1 cup Farmdale milk
  • 1 tbsp Alcafe instant coffee granules
  • 2 tbsp hot water    

Whipped coffee:  

  • 1 tbsp Alcafe instant coffee granules
  • 1 tbsp White Mill caster sugar  
  • 1 tbsp hot water  
  • 4-5 fresh blueberries, to serve
  • 1 tsp Moser Roth dark chocolate, grated, to serve

Method

  1. Place dates in a mason jar, layer with oats, yogurt, chia seeds, maple syrup and milk.  
  2. In a cup, combine coffee granules with 2 tablespoons of hot water. Let cool slightly and pour into  
    mason jar. Stir to combine.    
  3. Place a lid on the jar and refrigerate overnight.    
  4. In the morning, make the whipped coffee. Place the instant coffee, sugar and hot water in a medium-sized bowl and whip with a hand whisk or small electric whisk. Whisk for 2-3 minutes until coffee is paler and thick in consistency.    
  5. Spoon over the oats and top with a few blueberries and grated dark chocolate.

Tip:  Electric whisk is much faster.  

Optional: You can swap the order of layers top to bottom, say: coffee, milk, maple syrup, chia seeds, yogurt, oats and dates.

Can you put coffee in overnight oats?

Yes you can, however, it should be predominantly cold coffee, not a standard cup of hot coffee. If you pour hot coffee on top of your overnight oats, this won’t mix well with your greek yogurt!

What is whipped coffee?

Whipped coffee, also known as ‘Dalgona’ Korean coffee, is a frothy drink made by whipping instant coffee, sugar and a small amount of hot water. The coffee becomes a creamy foam that can then be dolloped onto milk or, in this instance, oats!  

How do you whip coffee?

To make whipped coffee, combine 1 tbsp of instant coffee, 1 tbsp of caster sugar, and 1 tbsp of hot water in a medium-sized bowl and whip with a hand whisk or small electric whisk. Do this for 2-3 minutes or until coffee is paler and thick in consistency.
