How to make Chargrilled Vegetable Cous Cous
Prep Time: 15 minutes | Cook Time: 20 - 25 minutes | Serves: 4 - 6
Ingredients
- 100g Cucina roasted vegetable flavoured cous cous
- 1 red onion, cut into wedges
- 175g mini capsicum, diced
- 1 medium zucchini, sliced
- 250g mini roma tomatoes
- 1 cup broccoli florets
- 200g white cup mushrooms, halved
- 2 tbsp The Olive Tree extra virgin olive oil, for roasting
- 1 tsp Stonemill dried oregano leaves
- ½ tsp Stonemill dried thyme
- 180g Emporium Selection Persian fetta cheese
- ¼ cup toasted pinenuts
Method
- In a large bowl combine all vegetables. Drizzle with olive oil, then sprinkle with dried herbs. Toss everything together thoroughly to ensure the vegetables are coated.
- Roast at 200°C for 20-25 minutes, turning halfway, until they are tender and caramelised.
- Prepare cous cous to packet instructions.
- Using a large bowl, combine vegetables and cous cous.
- Garnish with fetta and pinenuts.
