How to make Chargrilled Vegetable Cous Cous

Prep Time: 15 minutes        |        Cook Time: 20 - 25 minutes        |        Serves: 4 - 6

Ingredients

  • 100g Cucina roasted vegetable flavoured cous cous
  • 1 red onion, cut into wedges
  • 175g mini capsicum, diced
  • 1 medium zucchini, sliced
  • 250g mini roma tomatoes
  • 1 cup broccoli florets
  • 200g white cup mushrooms, halved
  • 2 tbsp The Olive Tree extra virgin olive oil, for roasting
  • 1 tsp Stonemill dried oregano leaves
  • ½ tsp Stonemill dried thyme
  • 180g Emporium Selection Persian fetta cheese
  • ¼ cup toasted pinenuts

Method

  1. In a large bowl combine all vegetables. Drizzle with olive oil, then sprinkle with dried herbs. Toss everything together thoroughly to ensure the vegetables are coated.
  2. Roast at 200°C for 20-25 minutes, turning halfway, until they are tender and caramelised.
  3. Prepare cous cous to packet instructions.
  4. Using a large bowl, combine vegetables and cous cous.
  5. Garnish with fetta and pinenuts.
