Pesto Avocado Pizza

How to make Pesto Avocado Pizza

Prep Time: 15 minutes        |        Cook Time: 15 minutes        |        Servings: 4

Ingredients

  • 4 Urban Eats Indian style roti bread
  • 2 shepard avocados
  • Zest of 1 lemon, to serve

Dressing:

  • 1 cup tightly packed, fresh basil leaves, plus extra to serve
  • 1 small garlic clove
  • 15g grated Westacre Dairy parmesan cheese, plus extra to serve
  • 1 tbsp Oh So Natural pine nuts, toasted, plus extra to serve
  • 3 tbsp The Olive Tree extra virgin olive oil
  • 1 tbsp lemon juice

Method

  1. Make the dressing by whizzing the ingredients together in a small blender or smoothie maker. Season well and set aside.
  2. Grill the roti according to packet instructions.
  3. Halve and peel the avocados then slice the flesh thinly. Drizzle the roti with some dressing then arrange the avocado slices neatly on top.
  4. Season with salt and pepper and scatter with lemon zest, basil, parmesan and pine nuts. Drizzle with more dressing and serve.

Option: You can make this dairy-free by leaving out the parmesan.
