How to make Pesto Avocado Pizza

Ingredients
- 4 Urban Eats Indian style roti bread
- 2 shepard avocados
- Zest of 1 lemon, to serve
Dressing:
- 1 cup tightly packed, fresh basil leaves, plus extra to serve
- 1 small garlic clove
- 15g grated Westacre Dairy parmesan cheese, plus extra to serve
- 1 tbsp Oh So Natural pine nuts, toasted, plus extra to serve
- 3 tbsp The Olive Tree extra virgin olive oil
- 1 tbsp lemon juice
Method
- Make the dressing by whizzing the ingredients together in a small blender or smoothie maker. Season well and set aside.
- Grill the roti according to packet instructions.
- Halve and peel the avocados then slice the flesh thinly. Drizzle the roti with some dressing then arrange the avocado slices neatly on top.
- Season with salt and pepper and scatter with lemon zest, basil, parmesan and pine nuts. Drizzle with more dressing and serve.
Option: You can make this dairy-free by leaving out the parmesan.
