How to make Corned Beef and Broccoli Laksa

Ingredients
- Urban Eats Malaysian style laksa soup kit
- 150g cooked Ready, Set…Cook! corned beef silverside, shredded
- 150g broccoli florets
- 2 boiled Lodge Farms free range eggs, halved
- Handful of bean sprouts
- ½ spring onion, finely sliced
- Handful of coriander leaves
- Chopped red chilli, to serve
- Lime wedges, to serve
Method
- Cook the corned beef, as per package instructions.
- Prepare the soup kit according to packet instructions (adding corned beef and broccoli in place of the prawns). Divide amongst 2 warmed bowls.
- Top with boiled egg halves, bean sprouts, spring onion, coriander and chopped chilli. Serve with lime wedges.
Option: You can use leftover cooked corned beef.
