Sweet and Sour Drumsticks with Charred Broccolini

How to make Sweet and Sour Drumsticks with Charred Broccolini

Prep Time: 1 hour, 15 minutes        |        Cook Time: 35 - 40 minutes        |        Serves: 6

Ingredients

  • 2kg bag Broad Oak Farms chicken drumsticks
  • 3 bunches broccolini
  • 2 tsp The Olive Tree garlic flavoured olive oil
  • 1 lime cut into quarters

Sweet and sour marinade:

  • 3 tbsp Oh So Natural organic apple cider vinegar
  • 1 tbsp Stonemill crushed garlic
  • 1 tsp Stonemill crushed ginger
  • 2 tbsp Remano tomato paste
  • 2 tbsp White Mill brown sugar
  • 170ml Westcliff pineapple juice
  • 2 tsp Stonemill sesame seeds

Method

  1. Place drumsticks on chopping board and score across each one 2-3 times (see Option).
  2. Add marinade ingredients in a large bowl and mix well. Add drumsticks, mixing thoroughly with hands. Cover bowl and place in fridge for 1 hour.
  3. Preheat oven 200°C (180°C fan-forced). Line 2 baking trays with baking paper. Lay drumsticks on trays, evenly spaced and keep excess marinade in bag. Place trays in oven. Cook for 15 minutes, turn drumsticks and baste with leftover marinade. Cook for another 15 – 20 minutes or until cooked through.
  4. Meanwhile, bring a medium-sized pot of water to the boil. Add broccolini and simmer for 3-4 minutes. Drain. Heat frypan with garlic oil and cook broccolini until lightly charred.
  5. Remove drumsticks from oven and baste drumsticks with any liquid from tray. Sprinkle with sesame seeds.
  6. Serve chicken and broccolini with fresh lime wedges.

Option: You can butterfly the drumsticks, for a lovely char and faster cook time.
