How to make Beer Basted Ribs
Method
- Pat ribs dry while you prepre the spice mix. Into a bowl, add salt, paprika, pepper, sugar, mustard, garlic, onion powder and cayenne pepper, if using. Mix well. Sprinkle the spice mix generously over all sides of the ribs (see tip). Marinate ribs for 2 hours, or overnight in the fridge.
- Preheat the barbecue grill to a medium heat. Season the grill plates with oil to prevent the ribs from sticking.
- Cook the ribs on the grill for 10-15 minutes, turning frequently to prevent the seasoning from charring.
- While the ribs are cooking, combine the beer and barbecue sauce and mix well (no need to heat it up, just whisk together to combine). Reserve around ½ cup of the beer basting sauce to serve on the side of the cooked ribs for dipping.
- Adjust the grill heat to medium-low and brush the ribs generously with the basting sauce. After 15 minutes, turn the ribs over and brush the other side generously with the basting sauce.
- Continue this process, turning and brushing the ribs with the sauce every 15 minutes, about 5 times, until the ribs are tender – approximately 1½ hours – the longer and slower you cook them, the more tender the ribs will be.
- Once cooked, serve the hot ribs with warmed reserved beer basting sauce on the side for dipping.
- These ribs pair well with coleslaw, pickles and hot chips or onion rings.
Tip: Prepare ribs the evening before or allow to marinate for 2 hours, before you commence cooking.
*You can also experiment with your own spice mixes.
Option: You can cook the ribs in the oven instead of the barbecue grill – preheat the oven to 180°C (160°C fan-forced). Place the prepared ribs on a well-lined baking tray and cook for 15 minutes. Turn oven down to 140°C (120°C fan-forced) and continue to baste and turn ribs, as per step 7.
