How to cook Winter vegetables?
Winter vegetables are known for being hearty, rich and delicious. There are quite a few ways you can cook them to maximise their flavour and get the perfect texture:
Roasting: Who doesn’t love roast potatoes? Crispy, golden edges with a pillowy soft centre. Cut your potatoes up into whatever size chunks you like and roast them in the oven with olive oil until crispy. Finish with sea salt and eat them with any meal or just on their own!
Braising: Carrots are the ultimate versatile veg. However, they really shine when they are braised. Next time you’re cooking a casserole, curry or stew, throw some peeled and chopped large chunks of carrots into the mix. They will slow cook and become soft, taking in the delicious flavour of whatever dish they’re in.
Sautéing: There’s nothing like the deep brown hues of sautéed vegetables. Sauté Brussel sprouts with bacon and maple syrup for a yummy side, or sauté beans or broccolini and finish with parmesan and lemon for elevated greens.
Mashing: Swap out classic potato with sweet potato and put a colourful spin on a classic. Sweet potato mash is a fantastic accompaniment for your favourite Winter dish and it is a great way to get more veg on the table.
