How to Make Chicken, Tomato and Corn Fritters Recipe


  1. Combine flour, cornflour and baking powder in a large mixing bowl. Combine egg and buttermilk in another bowl.
  2. Fold egg mixture into flour mixture. Fold in diced chicken, tomatoes, cheese, spring onions and corn. Season with salt and pepper.
  3. Heat a tablespoon of oil in a medium-sized, non-stick frying pan on high heat.
  4. Add ¼ cup of fritter mixture to the pan and fry each side until golden brown. Depending on size of pan, add 3 or 4 serves at a time to cook. Remove from pan when cooked and golden and repeat to cook 12 fritters.
  5. Serve with halved tomatoes and basil leaves.

Optional: Serve with your favourite salsa.

Tip: Can be stored in an airtight container in the fridge for 2 days.
