How to Make Corn Fritters with Coriander Salsa
- Place flour, paprika, cumin and chilli flakes in a bowl and season generously with salt and pepper, to taste. Add milk, soda water and egg, then whisk just until smooth. Add corn, chopped chilli (or jalapeños) and onion to the batter mixture and fold through to combine. Set corn fritter mixture aside.
- For coriander salsa, combine olive oil, coriander, garlic and spices together and mix. Add lime juice, salt and papper. Mix and season to taste.
- Preheat oil in a shallow frypan on high heat. Slide heaped tablespoons of corn fritter batter into hot oil (be careful, as oil may spit). Deep fry, turning occasionally, until puffed and golden (2-3 minutes). Drain on paper towels and continue cooking in batches until all batter has been used.
- Serve corn fritters warm, with coriander salsa and garnish with fresh coriander sprigs.
