All Day Breakfast Brioche

Method

  1. Roughly chop tomatoes & parsley. Add 2 tsp of olive oil to heated frypan add tomato mix and cook for 3 to 4 mins and set aside.
  2. Drizzle frypan with olive oil, add cut rashers of bacon and add eggs, and cook to your liking.
  3. Separate the soft brioche buns and lightly toast them in a lightly oiled fry pan.
  4. To assemble: place on serving plate. Top with rocket, bacon rashers, tomatoes, egg and salt & pepper to taste, Enjoy.
