Cheesy Potato Fritters

Method

  1. Peel potatoes and cut into medium chunks. Boil in salted water for approximately 10 minutes, or until tender. Drain well and then mash. Allow to cool.
  2. Sift flour into potatoes and add grated cheese, chives and eggs. If using paprika and garlic, add these now. Add a pinch of salt and some black pepper. Mix well to combine.
  3. Heat oil in large frying pan and cook fritters in batches. Add heaped tablespoons of mixture into the hot oil. Slightly flatten and cook for 1-2 minutes. Flip and cook on the other side. Keep warm whilst you cook the rest of the mixture.
  4. Best served warm and is great with cooked bacon or smoked salmon.
