Cheesy Potato Fritters
- Peel potatoes and cut into medium chunks. Boil in salted water for approximately 10 minutes, or until tender. Drain well and then mash. Allow to cool.
- Sift flour into potatoes and add grated cheese, chives and eggs. If using paprika and garlic, add these now. Add a pinch of salt and some black pepper. Mix well to combine.
- Heat oil in large frying pan and cook fritters in batches. Add heaped tablespoons of mixture into the hot oil. Slightly flatten and cook for 1-2 minutes. Flip and cook on the other side. Keep warm whilst you cook the rest of the mixture.
- Best served warm and is great with cooked bacon or smoked salmon.
