Spiced Cherry & Brandy Pudding Glaze
- Place the cherries and their juice into a medium to large saucepan. Add the maple syrup, brandy, vanilla and cinnamon.
- Place pan over a medium-high heat and bring to the boil. Turn the heat down slightly and cook for 12 minutes or until the liquid is thick and syrupy. Stir frequently to prevent it from catching on the bottom.
- Strain the glaze and reserve the glaze and cherries separately. Set aside to cool to room temperature.
- Spoon the glaze over the warmed Christmas pudding and serve with some of the reserved cooked cherries.
TIP: You can make the brandy glaze ahead of time and refrigerate.
