Banana & Chia Pudding
- Place the milk, chia seeds, honey, cinnamon and vanilla extract in a small bowl and mix until well combined.
- Cover with plastic film and place in the refrigerator for a minimum 4 hours or overnight to chill.
- When chia pudding mix is ready, place one of the bananas in a small bowl and mash with a fork until smooth. Add the mashed banana to the chia pudding and mix until well combined.
- To serve: Slice the remaining banana into thin slices. Spoon the chia pudding mixture into 2 small glasses or jars. Top with the sliced banana and cacao nibs. Serve immediately.
