- In a large bowl, combine the shredded pumpkin, flour, eggs, herbs, salt and pepper. Stir until the mixture is combined. Form patties (fritters) out of the mixture and set them aside.
- Heat olive oil in a large sauté pan. Once the oil is hot, place the fritters in the pan, pressing them lightly with a spatula into desired thickness, leaving space between them. Cook the fritters for 2 to 3 minutes, then flip them once and cook an additional 2 minutes until golden brown. Transfer the coked fritters to a platter and cover. Repeat the cooking process with the remaining uncooked fritters. Once all the fritters have been cooked, serve them immediately. Sprinkle them with salt, pepper and fresh chives and serve with sour cream.
