Teriyaki Pork Stir Fry with Pickled Cucumber


  1. Cook rice. Combine vinegar, salt, sugar and water in a small saucepan and heat until sugar dissolves. Remove from heat, add the sliced cucumber and carrot and leave to pickle.
  2. Heat a frying pan over medium heat. Cook the sesame seeds for 1-2 minutes and transfer to a bowl. Heat pan over high heat and drizzle with oil. Cook the mince in 2 batches for 3-4 minutes until browned and transfer to a plate.
  3. Drizzle pan with oil. Add the onion and cook for 4 minutes. Add pumpkin and cook for another 3 minutes or until tender. Add peas and cook until heated through. Add mince and teriyaki sauce and cook for 2-3 minutes or until heated through.
  4. Drain the pickled cucumber and carrot. Serve stir fry with the rice and pickled vegetables. If using, sprinkle with toasted sesame seeds.
