Vegetarian Pizza with Zesty Rocket and Pear Salad


  1. Preheat oven to 220°C. Thinly slice the onion and grate carrot.
  2. Spread 4 Lebanese breads with pizza sauce and place on baking trays. Top with onion, carrot, red kidney beans and shredded cheese. Sprinkle cheese with oregano and chilli flakes.
  3. Bake for 8-10 minutes or until bases are crisp and cheese melted.
  4. While pizzas are cooking, thinly slice the pear and toss with rocket leaves. Grate zest from lemon. Squeeze over lemon juice, drizzle with olive oil and sprinkle with zest. Serve with the pizzas.
