Mexicana Turkey Tacos
- Finely chop onion and grate carrot. Thinly slice sun dried tomatoes. Shred the lettuce.
- Heat a frying pan and drizzle with oil. Add onion and cook over medium heat for 5 minutes or until soft. Push to the side of the pan and add turkey mince. Cook, over high heat, for 4-5 minutes or until browned, breaking up any lumps. Add spice mix from taco kit and cook for 1 minute. Season with salt and pepper.
- Heat tacos in microwave or oven following packet instructions.
- Fill the tacos with grated carrot, lettuce and turkey. Sprinkle with sun dried tomatoes and drizzle over the tomato salsa.
