Mexicana Turkey Tacos


  1. Finely chop onion and grate carrot. Thinly slice sun dried tomatoes. Shred the lettuce.
  2. Heat a frying pan and drizzle with oil. Add onion and cook over medium heat for 5 minutes or until soft. Push to the side of the pan and add turkey mince. Cook, over high heat, for 4-5 minutes or until browned, breaking up any lumps. Add spice mix from taco kit and cook for 1 minute. Season with salt and pepper.
  3. Heat tacos in microwave or oven following packet instructions.
  4. Fill the tacos with grated carrot, lettuce and turkey. Sprinkle with sun dried tomatoes and drizzle over the tomato salsa.
