Pumpkin and Red Kidney Bean Rogan Josh with Cucumber Raita


  1. Cook rice following packet instructions. Halve cucumber lengthways and remove seeds with a teaspoon. Grate and squeeze dry with paper towel. Combine grated cucumber with the yogurt and season with salt and pepper.
  2. Heat frying pan and drizzle with olive oil. Chop then cook onion over medium heat for 5 minutes or until soft. Add the spice mix and cook stirring for 1 minute or until fragrant.
  3. Chop pumpkin into 2cm cubes. Add to the pan the pumpkin, simmer sauce, stock cube and ½ cup water. Bring to the boil, reduce heat to low and simmer, covered, for 20-25 minutes or until pumpkin is tender.
  4. Stir through kidney beans, season with salt and pepper and cook for 1-2 minutes or until hot. Serve with the rice and cucumber raita.
