Pumpkin and Red Kidney Bean Rogan Josh with Cucumber Raita
- Cook rice following packet instructions. Halve cucumber lengthways and remove seeds with a teaspoon. Grate and squeeze dry with paper towel. Combine grated cucumber with the yogurt and season with salt and pepper.
- Heat frying pan and drizzle with olive oil. Chop then cook onion over medium heat for 5 minutes or until soft. Add the spice mix and cook stirring for 1 minute or until fragrant.
- Chop pumpkin into 2cm cubes. Add to the pan the pumpkin, simmer sauce, stock cube and ½ cup water. Bring to the boil, reduce heat to low and simmer, covered, for 20-25 minutes or until pumpkin is tender.
- Stir through kidney beans, season with salt and pepper and cook for 1-2 minutes or until hot. Serve with the rice and cucumber raita.
