Baked Citrus Barramundi

Method

  1. Defrost frozen Barramundi portions in fridge, to packet directions.
  2. Place all the ingredients for the citrus glaze in a small saucepan. Bring to boil, then simmer over low heat for 3-4 minutes. Set aside.
  3. Preheat oven to 170°C (150°C fan forced) and line a large oven tray with baking paper.
  4. Spread citrus rounds onto baking paper then lay barramundi on top. Brush with citrus glaze and bake for 20 minutes. Remove from oven and brush once more with the glaze, then bake for a further 5 minutes. 
  5. Serve with an extra drizzle of glaze and lime wedges.
