Creamy Tomato Pasta with Bacon
Cook pasta in a saucepan of boiling water for 12 minutes or until tender. Drain.
Meanwhile, heat oil in a large saucepan over moderately high heat. Add bacon; cook for 5 minutes. Transfer to a plate. Add onion to pan; cook for 2 minutes or until starts to brown. Add garlic; cook for 30 seconds. Add mushrooms; cook for 4 minutes or until start to brown. Add passata and crumbled stock cube; return to a simmer. Stir in cream; cook over moderately low heat for 2 minutes or until thickened. Season.
Add pasta to sauce with spinach and half the bacon; cook for 1 minute or until heated. Serve topped with remaining bacon.
