Lemon Herb Chicken Meatballs

Method

  1. Preheat the oven to 180°C (or 160°C fan forced). Mix all the meatball ingredients until well combined. Cover and sit in fridge for an hour to chill and for the flavours to develop in the meatballs.
  2. Roll into approximately 35-40 small balls. Place on lined baking trays and bake for approximately 20 minutes. 
  3. Cook pasta as per instructions on packet. Drain and set aside.
  4. Melt butter in a large frypan over medium heat. Add the garlic, onion, lemon zest and wine. Sauté for 2 minutes. Add spinach and parsley, and cook for 1 minute. Add pasta, meatballs, grana padano and lemon juice. Toss to combine. Serve and enjoy.
