Lemon Herb Chicken Meatballs
- Preheat the oven to 180°C (or 160°C fan forced). Mix all the meatball ingredients until well combined. Cover and sit in fridge for an hour to chill and for the flavours to develop in the meatballs.
- Roll into approximately 35-40 small balls. Place on lined baking trays and bake for approximately 20 minutes.
- Cook pasta as per instructions on packet. Drain and set aside.
- Melt butter in a large frypan over medium heat. Add the garlic, onion, lemon zest and wine. Sauté for 2 minutes. Add spinach and parsley, and cook for 1 minute. Add pasta, meatballs, grana padano and lemon juice. Toss to combine. Serve and enjoy.
