Pulled Pork Rolls

Method

  1. Preheat oven to 200°C. Using a small knife, remove excess fat from pork. Heat oil in a large, ovenproof casserole pan over a high heat. Add in pork and cook for 3-4 minutes on each side or until browned, then remove from heat.
  2. Mix together the paprika, fennel, cumin and sugar in a small bowl. Season to taste with salt and pepper. Sprinkle this spice mixture evenly over pork, then pour the chicken stock around pork. Bake, uncovered, for 30 minutes. Reduce oven to 140°C. Bake, now covered, for 3 hours or until pork is very tender. Remove from oven and set aside to rest for around 15 minutes.
  3. Meanwhile, mix together the apple, fennel, radish, cabbage, mint and half the aioli. Season to taste with salt and pepper.
  4. Use 2 forks to shred the pork. Spread remaining aioli over bread rolls. Divide shredded pork among the rolls, then top with the coleslaw mixture. Serve immediately.
