Sweet Potato Bread Method Cut sweet potato into thick slices and boil until tender, about 10 minutes. Drain and mash. Set aside. In a medium sized bowl, combine flour, baking powder, spices, and salt. In another bowl, whisk the egg and add the sweet potatoes, honey, oil and molasses. Add the wet ingredients to the dry ingredients and stir until just combined. If adding optional nuts, fold them in gently. Pour the batter into a small loaf pan that has been lined with baking paper. Bake at 160 degrees celsius for 25-30 min. or until a toothpick inserted near the centre comes out clean.
Remove loaf from the oven and cool on a wire rack for about 10 min. Once slightly cooled remove the loaf from the pan and slice. Serve as is, or with a dollop of butter.
